Granny’s Pumpkin Pie Bars

Over Thanksgiving, one podmate took advantage of a full sized kitchen, and made her great-grandmother’s pumpkin bar recipe. They are quite delicious, and put a new twist on a traditional holiday favorite!

Materials:
1 box yellow cake mix
¾ cup oleo/margarine
3 eggs
1 lg. can pumpkin
2 ½ tsp pumpkin pie spice
1/2 c. brown sugar (packed)
2/3 c. milk
1/4 c. white sugar
1 teaspoon cinnamon

Procedure:
Bottom
1 pkg. yellow cake mix
1/2 c. oleo(margarine) melted
1 egg
Reserve 1c. of dry cake mix for topping.  Combine rest of ingredients and press in 9 x 13" pan.

Filling
3 c. Canned pumpkin(1 large can)
2 1/2 teaspoons pumpkin pie spice
1/2 c. brown sugar (packed)
2 eggs
2/3 c. milk
Combine ingredients and stir until smooth, then poor over bottom layer.

Topping
1 c. cake mix
1/4 c. white sugar
1/4 c. oleo (margarine)-NOT MELTED
1 teaspoon cinnamon
Sprinkle over mixture in pan.  

Bake 350 degrees, 40-50 minutes.  Until knife comes out clean. Cut in squares, top with whipped cream.
